I've been trying to make vegan chocolate chip biscuits for quite a while now - i've been following two different recipies, but neither of them have worked for me.

The problem is the margarine I think. I've been using a soya based one, and have also tried one with sunflower oil in, but of the six times I've tried, every time the biscuits are still soft when I take them out of the oven. I tried increasing the amount of flour and also gave them plenty of time to cool on a rack after cooking, but still they were squidgy!

Does anyone have any suggestions as to what I may be doing wrong, or what to chnage? Or maybe a whole new vegan choc chip cookie recipe?

Any suggestions gratefully received.

if you go to www.vegweb.com and search under recipes. you'll find about 100 cookie recipes.
