    Although I don't really support PETA or peta2, they do happen to have some of the best recipes and on their site.
    Try here.

    I just finished writing a cookbook (More Than Salad) and am working on another (no title yet). Here are few sample recipes:

    French Toast
    Vegans don’t despair! You too can have French toast.

    ⅔ C soymilk
    4 tsp pastry flour
    1 ½ tsp nutritional yeast
    pinch of salt
    1 tsp ground cinnamon
    4 slices of whole grain bread

    Spray skillet with nonstick cooking spray. Heat pan while preparing rest of ingredients.

    Whisk soft ingredients in soymilk.

    Dip bread slices into batter, soaking on both sides.

    Place bread on skillet, browning on both sides.

    Add butter and maple syrup.
    *******
    Mock Tuna
    Shaun loves this sandwich mix

    1 can garbanzo beans
    ¼ C chopped celery
    ¼ C chopped onion
    1 T lemon juice
    2 T Veganaise
    1 T parsley
    1.5 t powdered kelp
    salt and pepper taste

    Blend all ingredients in a food processor or blender.
    Chill.
    Enjoy on whole wheat bread.
    ************
    Peanut Butter Broccoli
    A Carla Creation

    ⅓ C peanut butter
    ½ C hot water
    1 T rice vinegar
    2 T oil
    1 t soy sauce
    1 t lemon juice
    dash of garlic powder
    2 C brown rice
    2 C water
    2 C broccoli

    Cook rice and broccoli, set aside.
    Whisk together peanut butter, hot water, rice vinegar, oil, soy sauce, lemon juice, and garlic powder to make sauce.
    Top broccoli and rice with sauce.
    **********
    Classic Chocolate Chip Cookies
    ¾ C sugar
    ½ C margarine
    ½ C oil
    3 T water
    2 t vanilla extract
    2.25 C flour
    1 t baking soda
    ½ t salt
    1.5 C vegan chocolate chips

    Heat oven to 375 degrees.
    Sift dry ingredients together.
    Mix wet ingredients together.
    Add the two mixtures together.
    Add chocolate chips.
    Spoon onto baking sheet.
    Bake for 8-10 minutes.

    FLUFFY PANCAKESSS!!!!! (best recipe i have had, isn't dense, and is super easy)

    Ingredients

    * 2 cups flour
    * 1 teaspoon baking soda
    * 1 teaspoon baking powder
    * 2 cups soymilk
    * 2 tablespoons oil
    *Maple syrup drizzled directly into the batter to your liking

    sift together the dry, mix in the wet, then use 1/4 cup measuring cups to poor it on the pan (which should be medium/medium low depending on how hot your stove is). Buy some Smartdeli breakfast "sausage" and you can make the best vegan pigs in a blanket at that.
    It is not God who kills the children. Not fate that butchers them or destiny that feeds them to the dogs. It’s us. Only us.

    I have this recipe too, it's delicious. Lightlife/Smart Deli makes the best fake meat stuff...it's so similiar that it freaks me out sometimes. I'm not supposed to eat a lot of soy because of my thyroid, so I found that replacing the soymilk with Rice Dream or Almond Dream is great.
