Hey everyone,

About two weeks ago I decided that I was going to try being vegetarian, and so far its been pretty good. There is no moral reason behind it, I have just been eating A LOT of shitty food lately and I figure this way I will be forced to actually pay attention to what I am eating. I was just wondering if anybody had any suggestions for veggie dishes I could try, perhaps some good recipes? I am still new to this and I am completely open to trying new things so I figured I would see what kind of suggestions some of you guys might have.

Yup.

French ToastVegans don’t despair! You too can have French toast.

⅔ C soymilk
4 tsp pastry flour
1 ½ tsp nutritional yeast
pinch of salt
1 tsp ground cinnamon
4 slices of whole grain bread

Spray skillet with nonstick cooking spray. Heat pan while preparing rest of ingredients.

Whisk soft ingredients in soymilk.

Dip bread slices into batter, soaking on both sides.

Place bread on skillet, browning on both sides.

Add butter and maple syrup.

Mock TunaHubby loves this sandwich mix from “Better Than Peanut Butter & Jelly”

1 can garbanzo beans
¼ C chopped celery
¼ C chopped onion
1 T lemon juice
2 T Veganaise
1 T parsley
1.5 t powdered kelp
salt and pepper taste

Mix all ingredients.

Chill.

Enjoy on whole wheat bread.

Vegan Spinach Lasagna
1 lb. medium tofu
¼ C soy milk
1 t oregano
3 t basil
1 t salt
2 T lemon juice
4 minced garlic cloves
1 chopped onion
2 C chopped spinach
4-6 C tomato sauce
cooked lasagna noodles

Heat oven to 350 degrees.

Sauté spinach, garlic and onion in oil.

Blend tofu, milk, oregano, basil, salt, lemon juice, onion/garlic mix in a food processor until it achieves a cottage cheese consistency.

Layer mixture with noodles and tomato sauce until it’s all gone (noodle, mix, and sauce, repeat).

Bake for 30-45 minutes.


Southwestern Corn & Potato Soup
A recipe developed while working at kitchen co-op
1 C chopped onion
2 minced garlic cloves
1 minced chile
¼ t salt
3 C vegetable stock
2 t cumin
1 diced potato
½ chopped red bell pepper
3 C corn
salt to taste

Simmer all ingredients together for 30 minutes.

Puree half the soup and add back to the pot for a creamy soup.

Cousin Beth's Pumpkin Pie DipA veganized version of my cousin’s Thanksgiving hit.

1 small tub of Tofutti Cream Cheese
2 C powdered sugar
1 C pumpkin pie mix
½ C Tofutti sour cream
1 t cinnamon
½ t ground ginger

Mix all ingredients together. Chill, and then serve with gingersnaps, fruit or bread. *drool*

Every one of these sounds amazing! I am especially intrigued by the mock tuna. I am going work my way through all of these recipes. Thanks so much, Carla!

no specific recipes but black bean and sweet potato burritos are amazing. Also lentil and kale soups often tide me over.

The best cookbook imo is Vegan with a Vengeance i also would recommend using vegwebs search to find meals with items you have on hand. The rating usually helps, though make sure you glance at the comments. I prefer low sodium and people often post when they think less sodium is still good. Anyways gl.

It is going well! I gave myself about a week before I caved and started eating meat again, but here I am 5 months later and still a vegetarian! Once I started to make an effort to make up for the protein I was losing by not eating meat I have started to feel a lot better and I have been eating A LOT healthier than I used to! I tried the mock tuna recipe that you posted a few months ago and I loved it.
